This dish gives you the satisfying texture of pasta without the heavy feeling afterward. Zucchini is over 90% water, incredibly low in calories, and packed with fiber, meaning you can eat a huge, filling volume while staying on track with your goals.

Combined with heart-healthy fats from olive oil and nuts in the pesto, this is a balanced meal ready in under 15 minutes.

The Green Glow Bowl

This recipe is flexible. Add grilled chicken or chickpeas for extra protein if you need it!

Ingredients:

  • 3 medium zucchini, spiralized (or peeled into ribbons)
  • 1 cup halved cherry tomatoes
  • 1/3 cup fresh basil pesto (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: Pine nuts, Parmesan cheese, red pepper flakes.

Instructions:

  1. Prep the Zoodles: Spiralize your zucchini. Place them on paper towels and sprinkle lightly with salt. Let them sit for 10 minutes to draw out excess water, then pat dry. This ensures they don’t get soggy!
  2. A Quick Sauté: Heat olive oil in a large skillet over medium-high heat. Add the cherry tomatoes and cook for 2 minutes until blistered. Add the zucchini noodles and toss quickly using tongs for just 2-3 minutes until tender-crisp. Do not overcook!
  3. Sauce & Serve: Remove from heat. Stir in the pesto immediately so it coats everything evenly.
  4. Top it Off: Serve immediately topped with fresh basil and optional cheese or nuts.
